Our limited edition Ramp Gin has arrived, and it’s our wildest gin yet. Imagine the antithesis to flavored vodka; the antidote to April showers. It embodies earthiness and vernal flavor.
Not clear, but a beautiful pale shade of green. Did we say it’s savory yet? Well it is. It’s SO SAVORY. Yes, chef.
Ramp Gin is a non-conforming gin and we could not be more excited to share it with you.
From Woods to Glass
To make Ramp Gin, we take our core botanicals—juniper, coriander, cassia bark, angelica root, licorice root, and cubeb—and add watercress, tarragon, green onion, leeks, grapefruit and lemon peel.
Watercress gives the gin that spicy vegetal element; the tarragon a punch of anisett-y herbaceousness; and the grapefruit and lemon peel, a zingy bright hit of citrus. Leeks and green onions create the savory backbone.
Post distillation, we rest the gin for 4-6 weeks in stainless steel to mellow. And then, the final step: we infuse the rested gin with wild-foraged RAMPS that we hand pick in our woods behind the distillery.

Ramps have become a bit of a meme in the New York restaurant world, and it’s easy to make fun of the long lines and high price point at farmer’s market tables. But the hype is for good reason, because ramps are the truffles of the Catskills.
What are Ramps?
Ramps are a wild onion in the allium family, and are packed with pungent garlicky flavor. They grow in shady, damp wooded areas and are one of the first plants to emerge starting in April, blanketing the forest floor with pops of bright green.
Sustainability
Ramps have a 5-7 year life cycle, so conservation when foraging ramps is super important. If you over-pick a ramp patch, it can take years for it to recover, if ever.
We’re lucky to have a massive ramp patch that sprawls over several acres. Even so, we generally just pick a leaf or two from each plant, leaving the bulbs to regrow year after year.
Flavor Profile
As you can imagine, this is not your average gin. We’d even posit to say that this is the craziest gin you’ve ever tasted. On the nose, Ramp Gin is big onion energy with a backbone of fertile earth and anisette. The taste is vegetal and peppery, then herbal and citrusy, sending not-so-subtle savory shockwaves through your system. The finish is smooth and subtly sweet—making you wonder what crazy allium concoction you just consumed.

Mixing Ramp Gin
Cocktailing with Ramp Gin is where things get really interesting.
It mixes beautifully with club soda or tonic (Ramp G&Ts, anyone?), waltzes with vermouth (50:50 martinis), and was born to be in a Gibson.

- 2oz Isolation Proof Ramp Gin
- 1oz Method Vermouth (or another blanc vermouth)
- 2 dashes orange bitters
Method: Combine in mixing glass, stir with ice until well chilled; strain into glass, garnish with expressed lemon peel and/or cocktail onion.
