Ramp Gin Gibson
Savory & Spirit-forward
- 1 ½ oz Isolation Proof Winter Gin
- ¼ oz clove simple syrup
- 1 bar spoon apple butter
- Hot Water
Method: Combine in mixing glass, stir with ice until well chilled; strain into glass, garnish with expressed lemon peel and/or cocktail onion.

Ramps are a wild onion in the allium family, and are packed with pungent garlicky flavor. They grow in shady, damp wooded areas and are one of the first plants to emerge starting in April, blanketing the forest floor with pops of bright green.
On the nose, Ramp Gin is big onion energy with a backbone of fertile earth and anisette. The taste is vegetal and peppery, then herbal and citrusy.
Cocktailing with Ramp Gin is where things get really interesting. It mixes beautifully with club soda or tonic (Ramp G&Ts, anyone?), waltzes with vermouth (50:50 martinis), and was born to be in a Gibson.
